Wind's Famous Recipes



I usually don't like to share my recipes,alot of them come from my grandmother,she was a superb cook,and had so many good things to eat as a kid,my whole family was fat from eating her foods,we used to always rush into her pantry and see what we could find,she always had pies and cookies and cakes for us kids to eat.My mother is also a really good cook and so am I,I think I would have liked to been a chef or pastry chef,if I didn't want to be a nutritionist.But now I am old,so I just cook for family and I can cook really well,I can make very good puerto rican cuisine,italian cuisine and other foods,and I get requests for this cheesecake,so I am sharing it with you

Crust
1 1/2 cups of Graham Cracker crushed
1/2 cup of sugar
4 tablespoons of melted margarine
Grease a cheesecake pan with margarine the bottom and sides of 10 inch pan.Mix crumb and sugar and add melted margarine.Pat down firmly in pan and put in the freezer while making rest of cake
Filling
3- 8 oz cream cheese
4 medium eggs
2 teaspoons of vanilla extract
1 teaspoon of lemon juice
1 cup of sugar
1-16oz pint of sour cream
1 half pint of heavy cream
2 tablespoons of flour
Beat all ingredients together.Pour over crumbs.Bake in 350 degree oven for 20 minutes,then turn down to 300 degrees and bake for 40 minutes.Turn off oven,Leave cake in oven for 1 hour to cool.Then refrigerate,when cold unlock sides of pan and put on plate.Can add a can of cherries on top if you like



Wind's Puerto Rican style Rice and Beans
2 teaspoons of Goya Recaito
1 package of Goya Jamon(Ham)
1 package of Goya Sazon Seasoning
A little Olive Oil
1 small can of Goya pink or pinto beans
2 cups of long or medium grain rice
1 teaspoon of salt
In boiling pan,pour olive oil to cover the bottom of pan,then add Recaito Jamon Seasoning,Salsa.Salt then stir Rice in and kind of stir fry it a bit Then pour in the pink beans and stir it around a bit more,then you add 3 cups of water and add the Sazon and stir then turn on low and cover let cook for 20 to 30 minutes let it sit on stove after done without cover to help it dry out a bit



Wind's Fast Chili
1lb of ground beef or turkey
1 package of old el paso taco seasoning
1 16oz.bottle of chunky salsa
2 cans of Progresso Red Kidney Beans
Cook ground beef in pan with a little olive oil,break it up then after it's cooked drain it on a paper plate with some paper towel.clean out skillet Put meat back in pan,add taco seasoning stir in about 3/4 cup of water and then add salsa and beans stir around then let it cook for about 30 to 35 minutes.Done make extra good add some tostitos,sour cream and cut up lettuce,tomatoes,black olives and pile it on.
